Mermaid Gin
Mermaid is a small batch, beach to bottle London Dry Gin with a hint of sea air. Hand-crafted on the Isle of Wight using ten ethically sources botanicals, Mermaid Gin delivers a smooth yet complex blend of fresh organic lemon zest and peppery grains of paradise, with a hint of sea air from locally foraged, fragrant rock samphire foraged from the Isle of Wight shoreline. The rock samphire is foraged mindfully at its peak, with an eye to preserving the native plant for the next season. Other botanicals include handpicked elderflower from local fields and Boadicea hops harvested from Ventnor Botanic Gardens along with English coriander, angelic root, liquorice root, juniper and orris root.

50ml Mermaid Gin | 10ml Elderflower Liqueur | 10ml Lemongrass Syrup | 25ml Lemon JuiceShake all ingredients with ice, strain into an ice-filled glass and garnish with a wheel of lemon and a sprig of elderflower.

Mermaid Zest Gin
Mermaid Zest Gin is subtly enhanced with grapefruit and Cascade hops. This is gently infused with Island bergamot, lemon zest and wild-foraged coastal rosemary, to produce Mermaid Zest Gin a light yet complex zesty tone with subtle sweetness and herbal notes. Mermaid Zest Gin features the ‘dew of the sea’, coastal rosemary foraged from the Island’s shores. It is also made with fruits grown in the Victorian walled garden of Queen Victoria and Prince Albert’s Osborne House.

30ml Mermaid Zest Gin | 15ml Yellow Chartreuse | 10ml Fresh Lemon Juice | 15ml Vanilla Syrup | 35ml Pineapple Juice | 50ml Sparkling wine
Shake all ingredients but champagne, double strain into a coup, topped with champagne. Garnish with a lemon peel.
