Firebird, the open-fire, Mediterranean restaurant in Soho, has collaborated with ice cream connoisseurs Happy Endings to create an exclusive dessert just in time for Summer! Set to launch on 24th of June, the ‘Happy Bird’ ice cream slice cleverly adapts Happy Endings, famed ice-cream-sandwich creations with a Firebird flame-kissed approach.
Devised by Firebird Founders Anna Dolgushina and Madina Kazhimova, and Happy Endings Founder, Terri Mercieca, the limited edition sweet treat will be a playful iteration on the classic Neapolitan Slice. Elevated by Firebird’s signature smoky flavours, it layers a smoked vanilla parfait with a decadent chocolate ice cream and a fresh strawberry sorbet layer, using Heilala Vanilla, The Estate Dairy and chocolate from Original Beans. The ice cream cake is topped with a vibrant pistachio crumble and juicy English strawberries sourced from Natoora. The dessert uses the best produce to accentuate the natural flavours of the ingredients, pairing rich chocolate and creamy vanilla with tangy strawberry to cut through the sweetness.
Guests can also indulge in Firebird’s a la carte menu, with signature snacks and starters such as rock oysters with a zingy rhubarb mignonette and raspberry oil, grilled halloumi with truffle and the sweetness of apricot and a succulent tiger prawn served with nduja butter and orange chimichurri. The main courses continue to put emphasis on the grill, with dishes including crispy duck breast with grapes and a black garlic cream and sea bass accompanied by fermented turnip and a nocellara tapenade.
This year marks 10 years of Happy Endings, as well as the launch of a new cookbook from its founder Terri Mercieca, The Happy Endings Cookbook. Firebird’s inventive take on the classic Neapolitan slice, found in the book, symbolises celebration and will be available to order at the Firebird restaurant from 24th June to 22nd July, across both Pride Weekend and National Ice Cream Day. The perfect sweet, summer treat.
