Best-selling chef and author Rachel Khoo has teamed up with Rowse Honey to create the perfect watermelon salad by replacing feta with a unique ingredient.

Watermelon salad is a popular summer dish in the UK and is traditionally made using watermelon, feta, cucumber and mint.

According to Rachel’s new recipe, using burrata in the salad creates the perfect balance of sweetness and creaminess.

It’s a game changer because of its unique buttery flavour, which complements the hot honey that Rachel uses in the salad.

Commenting on the recipe, taste expert at Rowse Honey, Mhairi Gibb, says, “Burrata has a mild, buttery flavour that complements the sweetness of watermelon without overpowering it. The mildness also provides a rich, soothing contrast to the sweet and spicy notes of the hot honey.”

Beyond its taste, the cheese has a luxurious and rich texture which complements the crispness of the watermelon.

“As you take a bite, the creamy texture of the burrata mellows the heat from the honey, making it the ideal summer dish. Feta, on the other hand, has a tangier and saltier taste, which can dominate the more subtle flavours of the salad,” she adds.

Rachel Khoo’s Watermelon & Hot Honey Burrata Salad

Ingredients

  • 1 small watermelon
  • 1 ball burrata
  • a handful of fresh basil torn, torn
  • Handful of fresh mint leaves, torn
  • 3 tbsp crispy fried onions
  • Toasted sourdough, to serve

Hot Honey Dressing

Method

  1. Mix the hot honey, lemon juice and salt, and put this dressing to one side.
  2. Cut the watermelon into cubes and place onto your favourite serving dish.
  3. Place the ball of burrata on top of the watermelon.
  4. Pour your homemade dressing over the burrata and watermelon.
  5. Sprinkle on the basil, mint and crispy onions to garnish.
  6. Serve with the toasted sourdough for ultimate scooping.
